Electric Smoker Recipes
A list of recipes for the various things I like to cook in my smoker. I recently purchased a MasterBuilt Electric Smoker. ($185 (shipping included) from Walmart dot com). I hope to keep this list updated as figure out more recipes.
Currently I am using hickory wood chips. (One tip: never soak the wood chips.)
Chicken Quarters
Set smoker to 275F
Smoke for 2 hours
Meat temp should be 175F
I generally use any marinade. Last I use a Mediterranean marinade which was pretty good.
Put some cuts into the chicken. Marinade in fridge for about 4 hours.
Smoked Salmon
Make a dry rub — 2 cups brown sugar. 1 cup Kosher salt. 1/2 cup ground black pepper.
Cover the fish with the rub. Cover and put in refrigerator for around 20 hours.
Wash the brine off and let it sit for about 2 hours, until there is a nice shine on the fish.
Set smoker to 250F
Smoke fish for 90 minutes.
