Flan in Instant Pot Recipe

Ingredients:
For caramel:
1/4 cup granulated sugar
1 tablespoon water

For custard
3 eggs (2 whole eggs + 1 yolk)
1 1/2 cup whole milk
1/4 cup granulated sugar (for custard- more/less adjust to taste)
1 tsp vanilla extract

Process:
Add the sugar and a couple of tablespoons of water in a saucepan and heat, stirring, until the sugar dissolves into a liquid and caramelize. Could take 7 to 9 minutes.

Pour the caramel into small cups. The flan custard will be poured into these cups as well. Make sure the cups you use will fit in the Instant Pot.

To make the custard, add the milk, eggs, sugar and vanilla extract into a bowl and mix well. Remember, with the eggs use two whole eggs and one egg yolk only. You can strain the mixture to remove the stringy white things ( the chalaza). Pour the custard mixture into the cups. Cover each cup with foil paper and place in the Instant Pot.

I placed a small face towel at the bottom of the pot and added 2 cups of water. Then placed the cups on top of the towel.

Instant Pot settings:
Set on pressure cook for 10 minutes.
Do a 10 minutes pressure release once pressure cooking is done.
Let the cups cool and then place in a refrigerator for about 30 minutes before eating.
